Pumpkin Muffins (slightly tweaked version of a recipe from Allrecipes.com)
Ingredients:
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
1 3/4 cups white sugar
1 cup brown sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
Directions:
1) Preheat oven to 325 degrees F. Put paper cups or grease into muffin pan.
2) In a large bowl, mix together pumpkin puree, eggs, oil, water and white and brown sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, allspice, nutmeg, and cloves. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into cups until 2/3 full.
3) Bake for about 25 minutes in the preheated oven. Done when toothpick inserted in center comes out clean.
I have made this recipe with applesauce in place of the oil and it turns out okay. But the oil is better (of course). Also, be sure to not overmix once you combine the wet and dry ingredients to ensure light and fluffy muffins. This recipe yields about 28 muffins.
